The special menu by the restaurant in Marina Bay Sands is available until October 31 and brings back signature dishes from the opening era of Boulud Sud in New York

It’s no secret that celebrity chef Daniel Boulud, who’s behind Db Bistro & Oyster Bar at Marina Bay Sands, loves Mediterranean fare, so much that he also has the Mediterranean-dining concept Boulud Sud in his stable of restaurants across the world.

Db Bistro’s executive chef Jonathan Kinsella will share Boulud Sud's delectable cuisine with gourmands in Singapore via a pop-up restaurant that runs from now until October 31.

“The idea came about because of the current climate where people can’t travel for their late summer holidays,” explains Kinsella. He added that this year is also the bistro’s 10th anniversary, and the event is a good way to celebrate this milestone in a very timely manner.

In creating the special menu, which will be updated every week, Kinsella highlighted that the team wanted to present a dining experience that will transport you to the shores of Southern France, Italy, Spain and the Greek islands. That said, the dishes on offer are mostly original recipes from the opening era of Boulud Sud in New York, where Kinsella was also part of the opening team.

“Presenting authentic recipes was really our prime focus, and we went as far as to bring in a spice consultant to hit the mark for some of the dishes,” shares Kinsella, who uses ingredients such as lemons and oranges from The Amalfi Coast and Sorrento to whip up these signature dishes.

Delicious meals like this are meant to be shared with family and friends, so the repertoire includes sharing starters of smoky octopus à la plancha sprinkled with Marcona almonds for added texture, as well as the flavourful saffron tagliolini tossed with fresh clams, seppia and bottarga.

The region is famous for its amazing seafood, too, as you’ll taste in the mains of salt-baked branzino and signature bouillabaisse. But those who can't live without their meat may opt for the grilled Australian wagyu strip served with an appetising salsa verde.

Executive pastry chef Mandy Pan tapped into the herbs, spices and fruits of the Mediterranean to craft desserts including apricot and star anise crème brulée, and Tunisian mint chocolate with pine nuts, jasmine flower and chocolate sorbet.
