The newest of Crystal Jade’s three fine dining concepts, Crystal Jade Pavilion is a polished waterfront eatery that veers away from the usual formal setting to allow for more comfortable and casual social gatherings. There’s a clear superstar on the menu here: the organic threadfin pan-fried in premium soya sauce. The dish may sound exceedingly ordinary and simple but in reality, it’s surprisingly sophisticated in terms of both taste and texture. Deep fried to a satisfying crisp with a firm yet flaky interior, the fish is then doused in soya sauce and pan-fried until it turns a divine caramel brown. But even before the main show, you can whet your appetite with the lux pan-fried sliced duck and foie gras on crêpe—a star in its own right—or the chilled homemade tofu with scallops. And to ensure full satisfaction, pick from any of the restaurant’s coconut-based desserts such as the chendol with coconut ice cream served in whole coconut, and the cheng tng served in whole coconut.
