This Chinese New Year, the recently revamped Hai Tien Lo at Pan Pacific Singapore has some tricks up its sleeves. The restaurant has rolled out a prosperity yu sheng with Hokkaido scallop, Norwegian salmon, sea grapes and black moss tossed in for extra luck. The yu sheng is surprisingly light yet brimming with flavour, with the sea grapes playing second fiddle to the rich freshness of the scallop and salmon. Up the festive ante with the traditional treasure pot, containing a host of exotic ingredients such as whole abalone, dried oysters, sea cucumber, pork knuckles, deer tendon and black moss stewed to rich, wholesome goodness in an intensely flavourful sauce. Available from 20 January to 14 February.
