Truth be told, the island's top chefs are equally inspired to add new creations, just in case you're looking for something different this Year of the Rat.

1. Abalone yu sheng
Leave it to executive chef Nicky Ng to come up with modern versions of this CNY staple. One of his offerings this year comprises a generous serving of abalone paired with strips of salad greens, carrots, radish and red cabbage, all dressed in a flavoursome sauce made with sesame, soybeans and garlic for more punchy flavours.
