Your CNY celebrations are not complete without the ubiquitous prosperity salad, and this year's selection of classic and newfangled adaptations certainly look set to impress

It is the expected fanfare at almost every Chinese New Year meal, that quintessential salad toss for prosperity and good luck many look forward to, and not only where popular signature recipes are concerned. Truth be told, the island's top chefs are equally inspired to add new creations, just in case you're looking for something different this Year of the Rat.

1. Abalone yu sheng

Leave it to executive chef Nicky Ng to come up with modern versions of this CNY staple. One of his offerings this year comprises a generous serving of abalone paired with strips of salad greens, carrots, radish and red cabbage, all dressed in a flavoursome sauce made with sesame, soybeans and garlic for more punchy flavours.

2. Prosperity smoked salmon yu sheng

You’ve probably enjoyed this popular restaurant’s classic prosperity yu sheng many times. This year, however, the culinary team has decided to get a little creative with the creation of the "Abundance Thai dressing", made with chillies, roasted peanuts and lime for a nutty, sweet and sour flavour profile that pairs well with smoked Norwegian salmon and the accompanying strips of radish, carrots and yam.

3. Prosperity yu sheng

For a healthful twist to this traditional salad, the culinary brigade at The Orchard Hotel Singapore has added more nutritious ingredients to its classic salmon yu sheng. There are wolfberries, commonly used in traditional Chinese tinctures, which also lend a sweet-sour tang, served alongside a mix are organic greens, including specially imported crystal ice plant for added crunch.

4. Bountiful yu sheng

Oh, it’s a bountiful dish alright, complete with ingredients such as Alaskan crab meat, black truffle and caviar. These are served atop julienned cucumber, leek, carrot, radish, red cabbage, rosella fruit, as well as pomelo pulp. For a piquant hit, the salad is dressed in a velvety, sweet-savoury spring onion sauce—a signature of the restaurant.

5. Signature fruit and smoked salmon yu sheng

Chef Sam Leong’s version is an enticing ensemble of crispy whitebait and tropical fruits such as jackfruit, green papaya and green mango, showered with a yuzu-honey-lime dressing for a delectably tangy twist.

6. Prosperity golden lobster yu sheng

Group executive chef Martin Foo showcases wholesome and freshly-made ingredients in his latest version of the yu sheng. The dish is an ensemble of marinated plum tomatoes, pickled cucumber, juicy pomelo segments, fresh ice plant and lily bulbs, kaffir lime leaves, red dates and walnuts. What's more, these are topped with meaty chunks of lobster and ikura, as well as a generous drizzle of the olive oil-based dressing made with plum sauce and sesame seeds.

7. ‘Ma-Luck’ fa cai yu sheng

Love your mala? Then you’ll definitely enjoy this spicy version, inspired by the well-loved Mala Xiang Guo (stir-fried version of the mala hotpot). The salad consists of julienned carrot, white radish, green radish, red cabbage, and pickled vegetables, topped with peanuts and golden crackers. Bringing the mix together is a piquant mala dressing, which features the chef’s special blend of herbs and spices.

8. Blessings of Fortune and Joyful Abundance yu sheng

New from Min Jiang at Dempsey is the Blessings of Fortune yu sheng, which features golden deep-fried chee cheong fan fashioned to look like slices of cheese and tossed in a savoury cheese powder, paired with baby abalones, tobiko and pickled radish on a bed of salad greens. Over at Min Jiang at Goodwood Park Hotel the Joyful Abundance yu sheng also features the same cheesy deep-fried chee cheong fan strips but is paired instead with slices of raw salmon. To boot, this platter is embellished with the restaurant’s signature illustration, and this year’s is a picture-perfect pair of children jovially playing.

9. Sustainable Yu Sheng with fresh Norwegian Atlantic salmon and New Zealand yellow tail kingfish

A signature of the chefs every year, the prosperity salad is packed to the brim with halal-certified ingredients such as green and white radish, melon, cucumber, leek, white sour ginger, sliced fresh salmon and yellowtail kingfish. Giving the salad an extra zing is the in-house dressing, made with green apple, apricot and orange jams mixed with plum sauce peanut oil and rice vinegar.

10. Shunde-style yu sheng

There’s always a good reason to head to a fine restaurant for a festive feast this CNY. And even if you’re not having one of Yan’s set menus, some of its must-have dishes are also available a la carte (for lunch and dinner, dine-in only). It’s updated signature Shunde-style yu sheng, dubbed Kaleidoscope of Prosperity, is one example. It features a generous mound of crispy vermicelli adorned with shreds of purple and yellow sweet potatoes, kailan and pickled ginger. And, rather than the ubiquitous salmon, it's completed with slices of fresh yellowtail and a sprinkling of gold flakes.
