Dishes here are an interesting mix of traditional and contemporary. Their soft shell crab and roast duck on crispy tofu wrap are prime examples. Though different in approach, these appetisers, like all the dishes on the menu, offer the perfect balance of flavour and texture, with freshness of ingredients held in high regard.

Other contrasts are the Cantonese classic, steamed sea perch with soya sauce, and the new-fangled sea cucumber and abalone roll with shrimp mousse in rich supreme sauce. In the hands of the chef, they turn out extraordinary. If you're a dessert aficionado, try their chilled cream of mango with sago pearls or chilled lemongrass jelly with aloe vera, again, one traditional, one with a hint of modernity.
