The Tatler Bar recommends six expressions from the exemplary Highland distillery that are truly distinct and delicious in their own way
Thanks to a growing variety of styles and flavour profiles, today's whisky drinker has never been more spoilt for choice. In fact, innovation has long been a part of this thriving industry. Take for example Scotland's The Dalmore, which has been in existence for over 180 years and is one of the pioneers of multi cask maturation.
Owned by Whyte & Mackay, the distillery has been in the good hands of master distiller Richard Paterson, who has been striving to make exceptional expressions that stay true to tradition for over 50 years. The process always starts with hand-selected casks that imbue the distilled liquid with the house’s signature chocolate and orange characters, layered with rich and nutty flavours. 1. The Dalmore 35 Year Old
Last year’s International Spirits Challenge awarded the 35 Year Old the prestigious Supreme Champion 2020 title, which means you can’t expect anything less than some of the brand’s finest work in this expression. First released in 2016 (with only 1,000 bottles released every year for the following five years), it is also one of the special offerings created by Paterson to celebrate his 50th anniversary in the industry.
Aged in a combination of bourbon barrels, 30-year-old Matusalem Oloroso sherry butts, and 1970 Port Colheita pipes, the extremely long ageing process ensures complex flavours which are lively and vibrant, with notes of tropical fruits and hints of roasted chestnuts and raisins. Bottled in a Baccarat crystal decanter adorned with the distillery’s royal stag emblem.
