1. Burnt Truffle Ricotta Cheesecake

Dolcetto by Basilico

Just in time for Mother’s Day, the pastry team has launched Chef’s Playground as part of its #TakeRegentHome arm. This programme allows the team to craft limited-edition confections, starting with the burnt truffle ricotta cheesecake.

It’s decadence at its finest with a combination of cream cheese and ricotta seirass, a Piedmontese variety made with sheep and cow’s milk. When baked, it's less molten than your usual burnt cheesecakes but delivers the same rich and creamy sweetness. The chefs make the cake extra special by serving it with Norcia black truffles for a touch of earthiness. Only 30 cakes will be released each week, so do keep a lookout for the next delivery slots on Regent Singapore's Instagram account.

Luna

The pastry chefs were inspired by Japan’s spring season to craft this beautiful confection, which makes for the perfect centrepiece for mum’s special day. It consists of a fluffy lime sponge that is accented with a zesty lime curd and bedecked with gin-infused fresh apples. And if that’s not enough, it’s further spiked with a special Sakura gin & tonic jelly layer made with Roku Gin. Order here.

Tigerlily Patisserie

Your chocolate-loving mum will surely appreciate pastry chef Maxine Ngooi’s signature bake that is available in two sizes (16cm and 20 cm). Ngooi only uses the finest Valrhona Araguani and Valrhona Jivara chocolates, which she transforms into a crumbly chocolate base layered with dark chocolate ganache and smooth whipped milk chocolate cream. But the beauty of this cake is that the sweetness is offset by the nuttiness of the homemade Nocciola del Piemonte hazelnuts praline and the crisp cacao nib tuille. Order here.

It consists of a light and airy sponge cake beautified with slices of sweet Chitose strawberries; this pairs extremely well with the semi-sweet pistachio cream. Order here.

7. Flourless Chocolate Cake

D9 Cakery

This gluten-free chocolate cake will please mum with its indulgent but not overly sweet almond cocoa sponge. And if that’s not enough, the base is given a lift with a generous layer of dark chocolate ganache before it's coated in an intense and slightly bitter itakuja chocolate cremeux. Order here.

8. Matcha Mia

The Patissier

Mum isn't a fan of chocolate? How about giving her this matcha-flavoured cake, comprising a feuilletine rice puff Opalys base and green matcha sponge. It’s made richer with thick layers of mascarpone mousse but its rich and heavy taste is counterbalanced by the zesty calamansi raspberry cream. The cake is then encased in a beautiful genmaicha almond shell for good measure. Order here.

9. Butterscotch Crunch

The Dark Gallery

Mother’s Day occurs only once a year, so you might as well give mum the chance to savour the most indulgent cake on offer. Such is The Dark Gallery’s signature sea salt butterscotch ice cream, presented on a base of chocolate cake and drizzled with a sweet-salty caramel sauce. For extra oomph, it’s decorated with artisanal macarons, nut brittle and caramelised almonds. Order here.
