Changi Airport’s Terminal 3 is the surprising gateway to a contemporary buffet affair.

Buffet connoisseurs and business folks in the area are well acquainted with four-year-old Azur at Crowne Plaza Changi Airport. The restaurant with its rich blue-glazed tiles and two show kitchens has built up a solid reputation for serving international cuisine. Emphasising quality over quantity, items ranging from the salad bar to the Indian selection are presented in small platters, to ensure that food doesn't become stale while sitting out too long. As a result, the chefs in the show kitchen stay busy whipping up stir-fries and hand-made dim sum throughout your meal.

Executive Sous Chef Alvin Leong, who was also team caption of the 2011 Singapore Culinary National Team, oversees the spread, which includes his own specialities such as the black pepper crab. Perennial crowd favourites include seasonal seafood such as Alaskan king crab and Boston lobster - creative diners have been known to add the fresh lobster to the Asian section's laksa bowl. On our visit, Australian spanner crabs filled with roe as well as large prawns were on the cold section, while a do-it-yourself rojak counter provided interactive fun.

Haagen-Dazs ice cream anchors the dessert buffet, but don't be distracted from the durian cakes if they are available - the light, not-too-sweet pastries are some of the hotel's best selling desserts.
