Singapore’s nightlife has never been more lively, thanks to the established and new bars that have opened recently — from the rooftop of the National Gallery Singapore to a secluded spot in Ann Siang Hill. But where do you go when you want a classic mojito? How about when you’re craving for a modern interpretation of the Singapore Sling? Say cheers to the coming weekend at these watering holes with the meanest alcoholic drinks.

Smoke & Mirrors

Contrary to its name, there’s nothing deceptive about this new rooftop bar at the National Gallery Singapore. Head bartender Yugnes Susela, who perfected his craft at Tippling Club, just wants to serve amazing cocktails; and he does this by focusing on the ingredients, presentation and flavour. 

His handcrafted cocktails include Southeast Asian inspired ones like Papaya Daiquiri, which has a base of Caribbean white rum, and Tiger Blood Daisy powered by Reposada tequila and sour plum grenadine. Nutmeg & Clove

After a brief hiatus, Nutmeg & Clove re-opens its doors in a new space at Ann Siang Hill. With the same bar manager, Leon Tan, leading the team, you can still expect popular tipples inspired by the different eras in Singapore. But of course, he has expanded the list with new concoctions such as the Barrel Age SG Sling from the Trading Post era and The Opium Wars from the Crown Colony.

Tippling Club

One of the veterans in the bar scene, Tippling Club continues to impress with its progressive cocktails that boast creative presentations. We all have to thank chef-owner Ryan Clift, who helms the kitchen and has never been afraid to experiment when it comes to food and beverages.   

Along with head bartender Kamil Foltan, the duo has curated an extensive drinks list that features various spirits including whisky, gin and vodka to create delightful tipples. Operation Dagger

Operation Dagger is the brainchild of two of the best mixmasters in Singapore, Luke Whearty and Aki Nishikura, formerly from Oxwell & Co. Located at Ann Siang Hill, hordes of cocktail lovers are being attracted to Operation Dagger’s experimental cocktail menu and apothecary-like interiors.    

Look out for popular tipples which include the Bee Pollen, concocted with bee pollen rye, thyme, oak, dark chocolate and dark lemon; Hot and Cold, which is a different version of the famous piña colada; and Tepache made from fermented beer and pineapple. Loof

From Lo & Behold Group comes Loof — one of the most well-known rooftop bars here. What’s the reason for its success? Besides its strategic location and picturesque Marina Bay view, its mixologists also offer the most addictive bespoke cocktails. 

Our favourites include the oh-so-pretty Krispy Klean Cucumber Martini; as well as the banana-infused whisky with smoked maple syrup and homemade bbq bitters, B.B. King. These are complemented by all-time favourite bar snacks such as truffle fries, sambal chicken wings and hoisin duck spring rolls.
