Fans of nasi lemak won’t be able to resist this offering from The Fullerton Hotel Singapore. The bird is first marinated overnight in a savoury concoction of dried chillies, kaffir lime leaves, shallots and lemongrass to infuse flavours to the core, and then roasted for a juicy, mouth-watering finish. Crushed ikan bilis and roasted peanuts are sprinkled onto the delectable skin for added crunch, and the bird is served with all the delicious trimmings, house-made onion sambal included.

Peranakan roasted turkey


It is no surprise that Pan Pacific Singapore’s chef Nancy Teo, who specialises in Peranakan fare, has come up with a Peranakan roasted turkey for Christmas. She uses ingredients such as lemongrass, garlic, turmeric, lime and galangal to enhance its taste. Chilli is added to give the turkey a spicy kick, which is then roasted to yield a golden-brown skin and succulent flesh. Sides are given a local twist, too, so you will enjoy the bird with the fragrant nasi kunyit (turmeric rice) and pickled vegetables.

Chilli crab roast turkey

The chefs at Hotel Fort Canning Singapore pander to Singaporeans’ love for chilli crab and turkey with this sumptuous creation. The bird is marinated for 12 hours in a rich crab stock made with mud crabs, flower crabs and a mix of local spices, before it is slow-roasted to achieve a firm skin and moist meat. You first taste the sweetness from the crabs, then the juiciness of the meat, with just enough heat to leave a lasting impression.

Asian salt spiced turkey with mandarin jus

Singapore Marriott Tang Plaza Hotel adds a dash of Asian flavour to its turkey. To create this special treat, the chefs soak the poultry in a mixture of herbs and spices including star anise, cinnamon, cloves and Sichuan pepper until the flavours are fully absorbed in the meat. The turkey is glazed generously with honey, before it is cooked to tender perfection. It comes with mandarin jus, which gives the meat a citrusy punch.
