Premium Japanese ingredients are transformed into delicious dishes by executive chef Chris Millar, in an eight-course menu.

2017 has yet to marinade, but Stellar@1-Altitude’s executive chef Chris Millar and culinary team didn’t waste time to spoil our tastebuds with their Nagasaki-inspired Antipodes menu. Available for dinner until 22 January, they’ll use the Japanese city’s best ingredients and produce to create their signature progressive Australian fare.

Some of the prized items to look forward to: the bluefin tuna and premium grade steaks. The latter will be whipped up into sumptuous plates like the ramen with fish consommé and shoyu and dashi caviar as well as wagyu beef with dragon potato and foie gras snow.

If you need any more convincing, the sashimi of madai with watermelon and heart of palm; uni with liquid mango, pickled sansho pepper and nori; and the kurobuta pork with miso and rhubarb are all winners.

Nagasaki isn’t only known for its food but for its swills too. And it’s only expected that for this special menu, the dishes will be complemented with sake from two of its finest breweries—Omoyashuzo and Fukudashuzo. Now that’s how we want to start 2017. 1-altitude.com
